Chocolate chip cookies that you can have more than one (or two).

Chocolate Chip Cookies

  • 1 Cup Dates - packed. See notes
  • 1 Ripe Banana
  • 2 Tblsp Almond or peanut butter
  • 3/4 Cup Almond meal
  • 3/4 Cup Rolled oats
  • 1/2 Cup Vegan chocolate chips

  • 1 Cup Dates - packed. See notes
  • 1 Ripe Banana
  • 2 Tblsp Almond or peanut butter
  • 3/4 Cup Almond meal
  • 3/4 Cup Rolled oats
  • 1/2 Cup Vegan chocolate chips
Instructions
  1. Soak the dates in boiling water for around 10 mins.
  2. In a food processor, pulse the dates.
  3. Add the nut butter and banana and blend.
  4. Add the almond meal and the rolled oats and mix through on a low setting.
  5. Transfer to a bowl.
  6. Add the vegan chocolate chips and mix through.
  7. Chill in the refrigerator for 10 minutes.
  8. Put small dessertspoons onto a lined baking tray and flatten.
  9. Back for 15 mins at 180°C or 350°F – WATCH THEM.
Recipe Notes
  • These are rather sweet, so you can just have 1 cup of dates but don’t pack them.
  • You do need to flatten them as they don’t spread when baking.
