Chocolate Chip Cookies
Ingredients

Dates – packed. See notes

Ripe
Banana

Almond or peanut butter

Cup
Almond meal
3/4
Cup
Rolled oats
1/2
Cup
Vegan chocolate chips
Instructions
Soak the dates in boiling water for around 10 mins.
In a food processor, pulse the dates.
Add the nut butter and banana and blend.
Add the almond meal and the rolled oats and mix through on a low setting.
Transfer to a bowl.
Add the vegan chocolate chips and mix through.
Chill in the refrigerator for 10 minutes.
Put small dessertspoons onto a lined baking tray and flatten.
Back for 15 mins at 180°C or 350°F – WATCH THEM.
Recipe Notes
These are rather sweet, so you can just have 1 cup of dates but don’t pack them.
You do need to flatten them as they don’t spread when baking.
