Vegan Black Bean Brownies

Not only are these brownies made with the incredibly versatile black beans, but they have no flour so are gluten-free as well.

Using maple syrup for the sweetener helps to keep healthy. There is some oil used which means it’s not totally whole food, but I’m telling you to go ahead and eat them!!! They really are incredibly delicious.

Ingredients
  • 1 1/2 Cups Black beans, rinsed very well
  • 2 Tblsp Cocoa powder
  • 1/2 Cup Quick oats
  • 1/3 Cup Pure maple syrup
  • 1/4 Cup Vegetable oil
  • 2 tsp Pure vanilla extract
  • 1/2 tsp Baking powder
  • 1/4 tsp Salt
  • 1/2 Cup Vegan chocolate chips, extra if you want!

  • 1 1/2 Cups Black beans, rinsed very well

  • 1/2 Cup Vegan chocolate chips, extra if you want!
Instructions
  1. Preheat oven to 180C (350F)
  2. Combine all ingredients except the chocolate chips in a food processor, blend until completely smooth.
  3. Stir in the chocolate chips.
  4. Pour into a lined 20x20cm (8x8inch) pan.
  5. Bake 15-18 minutes then let cool for 10 minutes
Recipe Notes
  1. You can sprinkle more chocolate chips on the top before baking.
  2. If brownies appear undercooked, you can place them in the fridge overnight to firm up.
  3. Make sure to let them cool before cutting.
