Vegan Pesto

Did you know that pesto is traditionally made up of three ingredients? A green vegetable or herb,  garlic and oil. So there’s nothing stopping you making a spinach pesto! Don’t worry, this one is traditional and uses basil.


  • 2 cups basil, packed.
  • 3/4 cup olive.
  • 2 plump cloves garlic crushed.
  • 1 1/2 cup pinenuts.
  • 3 Tblsp lemon juice.
  • 1 tsp lemon zest.


  1. Place all the ingredients into a food processor and whizz until all mixed through and you’ve reached the desired consistency.

Note:  The pinenuts will really be enhanced if you toast them first. Put into a non-stick pan over med-high heat shaking the pan so the nuts are evenly toasted. (Usually about 8 minutes).
