People are amazed at how you can turn a slice of carrot into the delectable delicacy of salmon. Has so many uses.
Vegan Salmon.
Begin with:
4 carrots. Scrub and rub with salt and bake at 180°C (350°F) till soft and the skin has blistered.
Mix together:
- 1 Tblsp apple cider vinegar.
- 2 Tblsp tamari sauce.
- 1 Tblsp maple syrup.
- 1 Tblsp dried kelp.
- 1 tsp smoked paprika.
- 1 Tblsp liquid smoke.
- Salt & pepper.
Method:
- Cool the carrots and slice into fine strips (using a potato peeler works well). Put slices into the marinade and refrigerate for 24 hours.
- Rinse the carrot strips and dry on a towel.
- Serve on crackers with vegan cream cheese or with smashed chickpeas.
