Ingredients
Mascarpone
  • 1 1/4Cups Cashewspre-soaked
  • 3Tblsp Almond milk
  • 1/2Cup Maple syrup
  • 1/4Cup Coconut oilmelted and cooled
  • 2tsp Vanilla
  • 1tsp Lemon juice
  • 1/8tsp Salt
  • 1Cup Coconut creamwhipped
Coffee marinade
  • 3/4 Cup Black coffeevery strong
  • 1 – 2Tblsp Liquorcan use Sherry
  • 1Tblsp Coconut sugar
Other
  • 2-3Packets Chocolate chip cookies
  • Grated Dark chocolate
Instructions
  1. For the Mascarpone: 1. Put all ingredients EXCEPT the coconut cream into a high powered blender. 2. Blend until smooth. 3. Fold in the coconut cream.
  2. For the Coffee: 1. Add all the ingredients together in a bowl.
  3. Put Together: 1. Smear a small layer of mascarpone into an 8×8 dish. 2. Dip the cookies into the coffee mix and lay out in a single layer. 3. Cover with mascarpone. 4. Add another layer of cookies. 5. Cover with the rest of the mascarpone. 6. Refrigerate preferably overnight. 7. Sprinkle with grated chocolate before serving.
